I've learned a lot of trick stabs during my time as a Spy but I'm always hearing about new ones I've never heard of. I wanted to create a list of trick stabs with a description and video if possible. Let me know which ones I've missed. Feel free to submit a video example for the list. 

Corner/Blind Stab:
Pretend to flee from enemy around a corner and double back side stepping wide while they round the corner.

Matador Stab:
Side step an enemy that is coming at you.

Stab N Sap
Backstab Engineer then quickly switch to Sapper and sap Sentry.

Sap N Stab
Sap an Engineer's building to bait them in.

Chain Stab
A series of backstabs in quick succession.

Top/Head Stab:
Jump on enemy's head and aim for the back.

Drop/Eagle Stab:
Drop down from above enemy.

Under Stab:
Bait or wait for enemy to drop down from above you.

Flick Stab:
Stab a jumping enemy or a enemy jumping over you.

Stair Stab or Ramp Stab:
Jumping from Stairs or ramp over the enemy.

Reverse Stair or Ramp Stab:
Stab a enemy jumping over you from stairs or a ramp.

Jump Stab:
Jump onto and off of a object over enemy.

Blast Stab:
Stabbing a jumping enemy using the knock back to kill them with the environment. (Mainly used on bonked enemy Scouts or Ubered enemies)

Uber Stab:
A stab or Chain Stab or the effects of a Medic's uber.

Leap Stab:
Jumping from a great height over the enemy.

Ghost Stab:
Faked jump stab.

Frog Stab:
Jump from an enemy's head over the head of another enemy.

Hide under water then stab.

Silly spinning Leap Stab.

Fail Stab:
Missed backstab. The best trick stab around.

Troll Stab:
A made up trick stab used to confuse fellow Spies.

Blind stab ain't a corner stab

it's when you keep the stab "blind" for you victim,

e.g. if you do a well timed jumpstab around a corner, they'll not even notice you jumping over them.

 

and one very important is the counter stab vs other spys tryin' to stab you.
